Lamb spleens are frequently called lamb melts. Similar to liver but more mild. Organ meats are richer in vitamins and minerals than muscle meats and make a nutritious addition to diets. When preparing wash the spleen and remove the thin outer skin and fat. Cover with water and simmer until tender—2 or 3 hours. Let them cool in the broth.
